。全年完善了《費(fèi)用開支規(guī)定》、《原材料收、付、存制度》、《堵塞漏洞制度》、《原材料合理使用制度》、《辦公用品領(lǐng)用制度》、《物品申購制度》、《財務(wù)審核稽查制度》、《收款員管理制度》等。今年全體員工已養(yǎng)成良好的節(jié)約習(xí)慣,合理開閉水掣、油掣、氣掣、電掣,發(fā)現(xiàn)浪費(fèi)現(xiàn)象,及時制止。另外,餐飲部領(lǐng)導(dǎo)、供應(yīng)部經(jīng)理定期進(jìn)行市場調(diào)查,掌握市場價格動態(tài),及時調(diào)整原材料的進(jìn)貨價。十月份推出的千年老龜湯,原耒是整套半成品進(jìn)貨,為降低成本,后耒改為自己進(jìn)龜,自己烹制,近二個月耒,節(jié)省成本三萬多元。

(六)做好政治思想工作,促進(jìn)經(jīng)濟(jì)效益的提高。

餐飲部充分發(fā)揮黨組織和工會組織的作用,關(guān)心員工,激發(fā)情感,增強(qiáng)凝聚力。

1.組織員工參加97年羊城優(yōu)秀廚師、優(yōu)秀服務(wù)員技術(shù)大賽,參加酒店田徑運(yùn)動會、書法比賽、技能比賽、象棋比賽、乒乓球賽等。參加酒店扶貧濟(jì)困捐助活動,學(xué)習(xí)"三字經(jīng)"活動,學(xué)英語50句活動。在各項(xiàng)比賽活動中,都取得較好的成績,其中在酒店的田徑運(yùn)動會,就摘取六枚金牌、三枚銀牌。

2.全年本部門舉行文明禮貌月技能知識搶答比賽、舞會、卡拉OK等文娛活動9次,春游1次,外出參觀學(xué)習(xí)13次,各類型座談會5次,婦女會2次,家訪6次,探望病員20次。

通過各種活動,使員工形成了一個熱愛酒店,團(tuán)結(jié)奮發(fā)的強(qiáng)大集體,員工思想品德好,全年拾金不昧事跡有8次,員工隊(duì)伍穩(wěn)定,流動量小,今年月均人員流動量約5人。

(七)完善勞動用工制度和培訓(xùn)制度,提高員工素質(zhì)。

1.嚴(yán)格勞動用工制度,餐飲部招聘新員工,符合條件的,擇優(yōu)錄取,不符合條件的,一律拒收,不講情面,保證招工的質(zhì)量。同時,上級領(lǐng)導(dǎo)深入員工之間,挖掘人才,不斷充實(shí)隊(duì)伍,通過反復(fù)考察,全年提拔部長6人,領(lǐng)班8人。對違反酒店規(guī)定的員工,以教育為主,對屢教不改者,則進(jìn)行處罰解聘,全年共處罰員工11人。由于勞動用工的嚴(yán)格性,員工素質(zhì)較高,辦事效率大大提高。

2.完善培訓(xùn)制度。為了使培訓(xùn)收到預(yù)期的效果,餐飲部領(lǐng)導(dǎo)首先明確了培訓(xùn)要具有"目的性"、"實(shí)用性"、"時間性"的指導(dǎo)思想。其次,成立了培訓(xùn)小組,再三是制定了培訓(xùn)方案,采取理論與實(shí)際相結(jié)合,以老帶新的方式,分期分批進(jìn)行培訓(xùn)。例如,每月一次管理培訓(xùn)、安全衛(wèi)生培訓(xùn);每周二次促銷培訓(xùn)、服務(wù)知識、服務(wù)技能培訓(xùn)等。再四,定期進(jìn)行考核,全年開展"推銷手冊"、"服務(wù)知識、技能"、"咨客服務(wù)規(guī)范"、"酒店管理知識"、"出品質(zhì)量"、"促銷業(yè)務(wù)知識"、"英語50句"、"禮貌用語"、"安全衛(wèi)生知識"等培訓(xùn)達(dá)200多次。(八)重視食品衛(wèi)生,抓好安全防火。

1.重視食品衛(wèi)生,健全各項(xiàng)食品衛(wèi)生崗位責(zé)任制,成立衛(wèi)生檢查組,明確各分部門衛(wèi)生責(zé)任人,制定了日檢查、周評比、月總結(jié)的制度,開展了流動紅旗竟賽活動,對衛(wèi)生搞得好的分部門給予獎勵,衛(wèi)生差的分部門相應(yīng)扣罰。由于全體員工的努力,全年未發(fā)現(xiàn)因食品變質(zhì)而引起的中毒事故,順利通過省市旅游局的星級酒店年審和國檢。

2.抓好安全防火工作,成立安全防火領(lǐng)導(dǎo)小組,落實(shí)各分部門安全防火責(zé)任人,認(rèn)真貫徹安全第一,預(yù)防為主的方針,制定安全防火制度,完善安全防火措施,各樓層配備防毒面具,組織員工觀看防火錄像,并進(jìn)行防火器材實(shí)操培訓(xùn)。出品部定期清洗油煙管道,做好各項(xiàng)設(shè)備的保養(yǎng)工作。地喱部定期檢查煤氣爐具的完好性,通過有效的措施,確保了餐飲部各項(xiàng)工作的正常開展和財產(chǎn)的安全,今年以耒未發(fā)生任何的失火事故。

(九)按照星級標(biāo)準(zhǔn),完善硬件配套設(shè)施,美化了環(huán)境,穩(wěn)定了客源,提高了經(jīng)營氣氛。

全年增加設(shè)施總投資300多萬元,主要是:二樓東廳的改造,二樓南、北廳的裝修,五樓走廊、洗手間的裝修,友誼夜總會的開辦、千年老龜火鍋城的設(shè)備購置等,由于服務(wù)設(shè)施的完美配套,吸引了不少的回頭客。三、存在的問題:1.出品質(zhì)量有時不夠穩(wěn)定,上菜較慢。2.廳面的服務(wù)質(zhì)量還不夠高。

3.防盜工作還做得比較差,出現(xiàn)失竊的現(xiàn)象。四、明年的設(shè)想:

1.提高出品的質(zhì)量,創(chuàng)出十款招牌菜式。2.抓好友誼夜總會、千年老龜火鍋城的經(jīng)營。3.加強(qiáng)規(guī)范管理,提高企業(yè)整體管理水平和服務(wù)質(zhì)量。4.開設(shè)餐飲連鎖分店.
